What I did: Cake: 3/4 cup butter 1 1/3 cups sugar 3 eggs room temp 1 teaspoon vanilla 3 cups cake flour sifted 1 cup milk (or milk alternative almond milk tastes great in these cupcakes) 2 1/2 teaspoon baking powder 1/2 teaspoon salt 1 small package lemon jello or Lemon Pudding Follow the box directions then add to cake batter. 1 cup vegetable oil Heat oven to 350 Mix all ingredients until smooth mix will be slightly thick. Put into cupcake cups and bake for 18-28 minutes. Let cool on cooling rack for 2 hours. Now for the topping you can do several things you can make whip cream, buy whip cream or use cream cheese frosting which is what we did. 2 8 ounce packages of cream cheese 1/2 cup butter 2 cups powder sugar 1 teaspoon vanilla Blend together. In a piping bag decorate the tops of the cupcakes. Add either sliced strawberries, blueberries, raspberries.
