This is a very light sponge recipe. You can add any type of jam you like.
This is a very light sponge recipe. You can add any type of jam you like.
Heat oven 220/ gas 7. Line & grease a tray. Whisk the eggs & sugar together until thick & creamy.
Double sift the flour . Add to the egg mixture. Fold in gently.
Pour into the tray. Bake for 8-10 mins.
Cut a clean piece of paper & lightly dust with sugar.
Remove from the oven & place on top of the sugared paper.
Immediately roll the cake up. Leave to cool completely.
Gently unroll the cake.
Spread with jam & cream.
Roll up again without the paper.
Decorate as you like
Cut & serve.
