These guinness stout cakes with bailey's are so cute and festive! And best of all they are super easy to make!
1: Get All The Ingredients 1 ½ cups (12 ounces) Guinness Stout 1 ½ cups (3 sticks) unsalted butter 1 cup unsweetened cocoa powder (preferably Valrhona) 2 ¾ cups all purpose flour 3 cups sugar 1 ½ teaspoons baking soda 3/4 teaspoons salt 3 eggs 2/3 cups sour cream
2: Preheat oven to 350°F
3: line Your Cupcake Tin
4: Bring stout and butter to simmer in heavy saucepan over medium heat.
5: Add cocoa powder and whisk until mixture is smooth. Cool slightly.
6:Whisk flour, sugar, baking soda, and salt in large bowl to blend.
7: In the bowl of a stand mixer with the whisk attachment (or with an electric mixer), beat eggs and sour cream to blend.
8: Add cooled stout-chocolate mixture to egg mixture and beat until combined.
9: Add flour mixture and mix on slow speed until just combined.
10: Let batter rest for 15 minutes then Fill cupcake liners up
11:Bake cupcakes until tester inserted into center of cakes comes out clean. I made mini cupcakes and these take from 12-14 min to bake. For regular size about 17-20 min
12: Let Cool and Frost With Irish Cream buttercream when completely cooled and top with festive decoration Recipe For Frosting 4 tablespoons unsalted butter 4 cups confectioner's sugar, sifted 1/4 teaspoon pure vanilla extract 6 ounces cream cheese
1: Cream butter and cream cheese together for 3 min 2: Add Vanilla 3: Slowly add sifted confectioner's sugar 4: slowly add the Irish Cream. place in pasty bag and frost
