Spinach Hummus & Sweet Potato Goat Cheese Quesadillas

These quesadillas are made a bit fancier with homemade spinach hummus, herbed goat cheese, sweet potatoes, and shredded chicken.

Spinach Hummus
- 1 cup Cooked Chickpeas
- 2 cup Fresh Spinach
- 1 cup Fresh Basil
- 1 tbsp Olive Oil
- 1 tbsp Sesame Tahini
- 2 tbsp Water , up to 4 tablespoons
- ¼ tsp Salt
- 1 pinch Ground Pepper

Quesadilla
- 1 Large Whole Wheat Tortilla
- 2 tbsp Spinach Hummus
- 1 oz Herbed Goats Cheese , or more
- 1 cup Shredded Chicken
- ½ cup Cooked Sweet Potato , sliced or mashed
- 1 pinch Salt
- 1 pinch Ground Pepper
Steps (5 steps, 20 minutes)

Spinach Hummus: Place all ingredients in a food processor starting with 2 tablespoons of water. Process until completely smooth, adding a tablespoon of water at a time as needed to make the hummus smooth. Store extra hummus in an airtight container in the fridge for about 5 days.

Quesadilla: Spread hummus on one half of the tortilla and goat cheese on the other half.

Top one half with chicken and sweet potato. Add salt and pepper to taste.

Heat a large non-stick (or greased) pan on medium low heat.

When the pan is hot, cook quesadilla for about 4 minutes on each side, or until each side is golden brown and crispy.
