Imagine the most delicious spinach dip you’ve ever eaten. . .in ball form. That’s a weird way to describe this appetizer. These cheesy Spinach Balls are as decadent as a rich and creamy dip, but without all the heavy, thick cheese. They are formed into “pop-in-your-mouth” bites that make them the perfect party recipe. Trust me, even those little people who fear “green things” (my children) will crave this snack. Especially if you can convince them to assist in rolling out each small ball with their helpful little hands. Working with kids in the kitchen usually translates to more flexible palates. USUALLY. I am not promising miracles here. What I am promising is a simple, tasty recipe that you will want to make again and again.

You Will Need (8 things)

  • 2 (10-ounce) packages frozen chopped Spinach , thawed, drained, and squeezed of all moisture
  • 2 cup Italian-seasoned Breadcrumbs
  • 1 Yellow Onion , diced
  • ¾ cup Unsalted Butter , melted
  • ½ cup grated Parmesan Cheese
  • 1 tsp Kosher Salt
  • ½ tsp Freshly Ground Black Pepper
  • 4 Large Egg(s)

Steps (2 steps, 15 minutes)

    Preheat the oven to 350°F. Stir together the spinach, breadcrumbs, onion, butter, Parmesan, salt, pepper, and eggs in a large bowl until combined. Measuring 1 tablespoon at a time, roll the mixture into 48 balls, and place them on a greased baking sheet.

    Bake until the edges are golden, about 30 minutes, rotating the baking sheet halfway through cooking.
