An easy, simple and cheap recipe.
Firstly, gather all your ingredients!
Slice your tomatoes into small chunks. This will make it easier and quicker to boil them.
Place them in a pan of boiling water. Leave them to tenderise for 15-20 minutes.
While the tomatoes are boiling, chop up an onion and a clove of garlic.
Heat some oil and sauté the onions and garlic.
Once the tomatoes are boiled and tender, drain them and place back in the pan.
Place the basil, onions, garlic and spinache In with the tomatoes and mix.
Then transfer into a food processor or a blender and blitz. You can have the mixture at any consistency. It can be lumpy or smooth depending upon how you prefer the texture.
Transfer back into a pan. Add some water to make the mixture into a soup. And, add as much cream as you wish. Add some spices (I used;salt, pepper, paprika, mixed herbs and chilli powder). Add some tomato purée. This will thicken the soup and will add a darker redder colour.
Heat and garnish with cream and/or basil leaves. Serve with bread and butter (optional).
