This recipe is a real lifesaver on those nights when we don't have a lot of time, but still, want something tasty and filling for dinner. It's quick and easy and it does not require a lot of cleaning up afterward!
In a medium bowl, combine all the ingredients to make the sauce and give it a quick stir. Taste the sauce and make sure you are pleased with the flavor and set aside.
Bring a non-stick skillet to medium-high on the stove and add 1/2 tbsp of coconut oil. Before adding the Chicken thighs to the skillet, make sure you season with a pinch of salt & black pepper.
Once the oil is hot and the Chicken thighs are seasoned, add them to the skillet and let them cook for about 6-7 minutes on each side.
After the Chicken is cooked on both sides, add the Spicy Teriyaki Sauce to the skillet and mix well. Make sure the Chicken is well coated with the sauce.
Let it cook until the sauce starts to reduce and add the corn starch to thicken the sauce a little. If you are satisfied with the density of the sauce, remove from the stove and add some fresh cilantro or spring onions to garnish.
