You Will Need (17 things)

  • For the shredded beef:

  • 2 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 lbs chuck roast Meat
  • 2 tbsp Olive Oil
  • 1 cup Beef Stock
  • 1 tbsp Tomato Paste
  • 2 Chipotle Pepper minced
  • 1 large Onions diced
  • 4 Garlic Cloves diced
  • For serving:

  • Tortillas
  • shredded Lettuce
  • Avocado
  • Lime wedges
  • diced Tomatoes

Steps (5 steps, 500 minutes)

  1. 1

In a small bowl, combine the chili powder, cumin, and paprika. Rub the spice mixture on both sides of the beef.

  2. 2

Add the oil to a large skillet over medium-high heat. When the oil is hot, add the beef and sear, about 5-6 minutes per side, until it's dark and crusty. Place the beef in a slow cooker and make the pan sauce.

  3. 3

Leave the pan over medium-high heat and add the beef stock, tomato paste, and chipotle peppers. Whisk to combine and cook for 4-5 minutes or until the sauce thickens slightly. As the sauce cooks, scrape the brown bits off the bottom of the pan.

  4. 4

Add the onions and garlic to the slow cooker and top with the sauce. Cook on low for 8-9 hours or until the beef is easily shredded.

  5. 5

Remove the beef from the slow cooker and pull apart. Strain the onions from the sauce and mix into the shredded beef. Serve with tortillas and your favorite toppings.
