Spicy Parsnip And Sweet Potato Soup

A nice warm healthy winter soup

You Will Need (12 things)

  • 1 pinch Sea Salt
  • 1 dash Olive Oil
  • 6 tsp Cumin
  • 1 tsp Hot Chili Pepper(s)
  • 1 tsp Caraway Seeds
  • 5 tsp Fenugreek
  • 3 x Garlic cloves
  • 1 ½ l boiling Water
  • 1 kilo Parsnips
  • 2 x Sweet Potato
  • 1 x Onion
  • 3 x Vegetable Stock cubes

Steps (12 steps, 60 minutes)

    Peel and cut parsnips and sweet potatoes, dice onion, peel garlic clove

    Heat oil in a large pan and fry onion and garlic for 3 or 4 mins

    Add vegetables and caraway seeds and fry for approx 10 mins stirring everynow and then

    Add water and stockcubes , cover and bring to boil then turn heat down and simmer for 20 mins.

    Put in blender bit by bit,then return to pan

    Add the cumin, fenugreek, salt and chilli powder

    Stir well and serve
