Spiced Country Breakfast Smoothie

Using stewed fruit is a novel approach to smoothie making, but this fruit adds a mellow flavour that you don’t get from fresh fruits.

You Will Need (9 things)

  • 1 Apple , peeled, cored and chopped
  • 1 Pear , peeled, cored and chopped
  • 115 g (4 oz) chopped Rhubarb
  • 25 g (1 oz) Blackberries
  • Squeeze of Lemon Juice
  • 1 tsp Honey
  • 120 ml (4 fl. oz) low-fat natural Yogurt
  • 1 tsp Pumpkin Pie Spice
  • Honey , to decorate

    Place all of the fruits into a pan with 2 tablespoons water, the lemon juice and the honey. Bring to the boil, then turn down to a simmer. Poach the fruit for 10 minutes or until it is tender. Remove from the heat and let cool. Place the stewed fruit in a blender with the yoghurt and add 1 teaspoon pumpkin pie spice to the stewed fruit before blending. Process for 1 minute or until smooth. Pour into a glass to serve. Drizzle a little extra honey over the smoothie if desired.

    TIP
    Stewed rhubarb is also delicious in a smoothie, and stewing makes it a lot easier to process the fruit together.
