This recipe is for an omlette that you cut in half in the pan and will serve two people. The omelette has a little bit of a kick, but if you have a picky eater that doesn't like a lot of different things or too much spice, like my son, you can skip topping that portion with salsa.

Gather the ingredients
Turn stove on low heat and add the 2 tbsp of margarine
While the margarine is melting, crack the eggs in a bowl then beat them briskly.
Once eggs are beaten, add 2 tbsp to make the omellette fluffy.
Add 1/4 tsp coriander. If you like, add a few dashed of seasoned salt (I used 2 shakes)then beat mixture until blended.
By this time the margarine should be melted. Swish it around the pan so that bottom and edges are coated.
Pour egg mixture into frying pan and turn up to medium heat and cook until they look like this.
Sprinkle the cheese over the top.
Flip one side of the omellette onto the other side.
Cut the omellette in half with the spatula.
Spoon on the salsa (if desired)then serve.
