Whisk together the chickpea flour, salt, pepper, garlic powder, & baking powder. Slowly add the water & continue whisking until there are no clumps in the batter.
Stir in the onion & peppers if using.
Preheat your frying pan over medium heat & spray with cooking spray. Pour about 1/2 of the batter in the pan. Enough to spread out & cover the entire bottom. (You can also use 1/4 cup portions to make smaller ones.)
Let cook for about 5 minutes or until the bottom of the socca is browned & easy to flip. Cook for another 5 minutes or until the inside is fully cooked.
Olive oil dip: Mix all ingredients.
As an appetizer or party food: Using a pizza cutter, cut the socca into triangles. Serve with olive oil dip, hummus, kalamata olives, and sundried tomatoes. Dip & enjoy!
As a pizza: Preheat oven to 350 Spread a generous layer of olive oil dip onto the crepes. Top socca with sundried tomatoes, kalamata olives, spinach, and daiya mozzarella cheese. Bake for 8 minutes or until cheese begins to melt. Garnish with more spinach or greens of choice.
