½ pkg (8oz) of frozen asparagus spears - cut into 1 ½ in lengths ½ pkg (8oz) of ready to eat snow peas, stringed ½ small red onion - sliced thinly into spikes by cutting in half and then downward against the rings in wedges. 2 tsp olive oil 2 tbsp minced fresh garlic Salt to taste ¼ c lemon juice Saute medium high in a skillet the oil, onion, peas, salt and asparagus until the asparagus changes to a more olive green and the peas become a brighter green. Add the garlic and sauté for 1 to 2 minutes. Add the lemon juice and sauté just long enough for it to mostly evaporate. Serves 4 as a side dish or 2 as an entrée.

String your snow peas by snapping off the end and pulling the string off along the bottom edge.
Chop the frozen asparagus into 1 1/2 inch bits. Slice the onion in half and the cut fine wedges against the rings to get spikes.
Pour the EVO into a saute pan at a medium high heat. Add the snow peas and asparagus and onions. Stir often.
Saute until the snow peas and asparagus just change their color. Add the garlic and saute for 1 or 2 minutes. Add the lemon juice and stir untill it cooks down, 1 or 2 more minutes. Enjoy!
