We all love pizza, right? Pizza or some form of flat bread-y substance covered in toppings must easily be one of the most popular foods in the world. I can’t recall a single instance of someone wrinkling their nose and saying ‘Eh, not really’ when asked if they like pizza. Usually people will tell you their favorite kind of pizza. The varieties of pizza are endless – you can go vegan, vegetarian, low-carb, no carb, gluten-free, or meat lover’s supreme topped with two pounds of cheese. I don’t care – I like em’ all (unless there’s pineapple on it in which case I won’t touch it). I have my tried and true standby pizza recipes but switching things up every now and then usually yields some delicious results. You end up with something like this Smoky BBQ Chicken Pizza. It’s smoky, tangy, spicy, a little sweet. Try to stop at just one piece. I bet you can’t.

Prepare homemade pizza dough. Allow dough to rise for 1-2 hours
Heat oven to 350 degrees. Place chicken breasts on baking pan. Drizzle olive oil over chicken breasts and add garlic powder, smoked paprika, cayenne pepper, kosher salt, and pepper. Make sure chicken is coated in spices. Bake chicken breasts for 20-22 minutes and remove from oven. Set aside.
Place BBQ sauce, tomato sauce, garlic powder, smoked paprika, oregano, thyme, kosher salt and pepper in a small bowl. Stir until combined.
Chop button mushrooms, fresh spinach, and cilantro. Dice the chicken into chunks. Shred Gouda cheese.
Bring the oven temperature up to 425 degrees. Roll out 2 pizza crusts. Place the pizza crusts on two separate pizza pans. On each crust place 1/2-3/4 cup of sauce, sliced mushrooms, spinach, chicken, and Gouda (in that order). Bake pizzas for 10-12 minutes or until cheese is golden and bubbly. Remove from oven and garnish with pickled jalapenos and cilantro. Slice and serve.
