Gather ingredients. You'll need lemon, almond extract, vanilla extract, sugar, and ripe peaches.
In a pot, combine chopped peaches, sugar, lemon juice, and extracts.
Stir and cook for 15-20 minutes until thickened. Smooth out chinks with a stick blender.
Cool jam in the fridge and enjoy with your favorite scones!
