This coffee cake is infused with Driftwood Coffee beans from Cajamarca and has hints of dark toffee, cocoa and roasted nut.
Grind your coffee beans - we'll use some for the cake and make the rest into a pot of coffee.
Place the flour, sugar, ground coffee, cocoa, baking powder and salt in a bowl.
Stir in the water, vegetable oil, almond extract and apple cider vinegar until smooth.
Pour the cake batter into a greased baking tin.
Bake in an oven at 180'C for 40 minutes.
Leave to cool and serve with a hot pot of coffee.
