Pop the shiitake mushrooms in a bowl and add a little boiling water. Just enough to cover the mushrooms and leave to soak for 15 minutes.
Drain out the water and coat the mushrooms in liquid smoke, leaving to absorb for another 10 minutes.
Sprinkle with smoked sea salt.
Try a mushroom. They should be salty and smokey with a taste like bacon.
Chop into thin slices.
Chop the onion into thin slices.
Mince the garlic and heat in a frying pan with a little vegetable oil.
Fry the onions until soft and golden.
Add the mushrooms and sesame seeds.
Season with a tsp or two of soy sauce.
Scoop the filling into a bowl and gather the dumpling skins and a small bowl of water.
Brush half of a dumpling skin with some water.
Place a spoonful of filling into the middle of the dumpling skin.
Fold the dumpling in half and press down the edges to seal.
Repeat for the remaining dumplings.
To cook, either steam or boil the dumplings for a few minutes until they float to the top.
Scoop out and then pop in a frying pan with a little vegetable oil, frying for a few minutes on either side until golden.
Serve with some soy sauce for dipping.
