Comforting Shepherd's Pie is a nourishing meal that the whole family will love. This one is made into muffin sized meals with a pie crust bottom and smothered in gravy. The whole wheat crust on the bottom gives it the most delicious addition of crunch that goes with the shredded roast beef and mashed potatoes perfectly. I often fix after this after I have made a large roast beef and mashed potato dinner for my family. I make a large roast, and a double portion of mashed potatoes and gravy for one meal, then with the leftovers I make these wonderful Shepherd's Pie Mini's for another meal.

Instructions

    Pre-heat oven to 350 degrees. Have your roast beef already cooked and shredded and placed in a bowl. Mix in 1-2 cups of gravy; or enough to moisten the meat and give it a loose base. Prepare your favorite pie crust recipe and roll out the dough onto a floured surface. I used a whole wheat pie crust for these; you can find the recipe on my website link above, or make any pie crust you choose. Roll the dough until it is about 1/8th of an inch in thickness. Cut circles with a jar or a glass or a circle biscuit cutter. Press into the muffin pan.

    Fill the pie crust 3/4 full of the shredded roast beef and gravy mixture.

    Add peas, corn and minced onion to each pie; about a teaspoon of each, or to your own liking.

    Put the mashed potatoes into a cake decorating bag, and pipe the mashed potatoes over the top.

    Bake at 350 degrees for 30-40 minutes. While pies are baking, heat gravy, and keep warm until serving.

    To serve, pour gravy over the top.
