Seedy Beetroot & Apricot Brownies

Purple beetroot brownies with apricots, white chocolate chips and lots of seedy goodness!

I've been curious about putting beetroot into brownies and cakes for a while and finally plucked up the courage to give it a go. Knowing that Tom would go "yuck yuck yuck" at the thought of combining one of his favourite treats with root vegetables, I decided to keep it a secret until he'd tried them and knew he liked them! So, if the king of fussy eating likes these brownies, I can promise you will too!

You Will Need (11 things)

  • 100 g Butter
  • 3 Eggs
  • Mixed Seeds
  • 100 g Sugar
  • 75 g Whole Wheat Flour
  • 50 g Ground Almonds
  • 2 Small Beetroot s
  • 50 g Cocoa
  • 50 g Dried Apricots
  • 50 g White Chocolate Chips
  • 2 tbsp Soy Milk

Steps (8 steps, 25 minutes)

    Blend together the beetroot, butter and sugar until smooth and then scrape into a bowl. Beat in the eggs until the mixture is nice and fluffy.

    I love the colour of the pink butter!

    Chop up the apricots and any other yummies you want to pop in the brownies.

    Add the flour, ground almonds, white chocolate chips, cocoa and apricots to the mix.

    Mix together until combined.

    Scrape into a greased baking tin with a spatular and smooth off the top.

    Sprinkle with a generous helping of mixed seeds.

    Bake for 18 minutes at 200'C.

    Cut into squares and serve!
