A Bakewell Tart That Is As Friendly as possible To Low Sugar/Fat/Carb Diets (Depending on How Much You Eat)!

I was sitting listening to The Archers one afternoon and felt in the country mood. After looking in the fridge and spotting some pastry, that was a week from it's sell buy date, I decided to whip up a Bakewell Tart – naturally! It would be nice to say my Grandma passed on this recipe, but I got it on a retro cooking website! I tweaked it a bit to meet my diatry needs (I’m diabetic) so this Bakewell has lower fat and sugar content then some recipes that you might see when you flick through some recipe books. So if you like jammy Bakewells – add more jam! If you like them gorgeously sweet - make more icing and add more cherries! .. Humm .. and I wonder what a chocolate Bakewell would taste like?!... Instructions

    Pop you're ovon onto Gas Mark 5. And put some music on, I suggest something relaxing, but not to relaxing. All of the ingredients where in are cupboard or at good ol' Sainsbury's by the way.

    Spread the jam (any kind you fancy - I'd used low sugar raspberry jam) lightly over the bottom of the pastry case.

  3. Put the pasrty case in the fridge to set a bit.

    Mix/cream the margarine and the sugar together untill it's smoothish and light in colour.

  5. Add the almond essence and beaten egg.

  6. Sift in the flour.

  7. Add the ground almonds and mix'tll up.

    Get the pastry case from the fridge and spoon the mixture over the jam.

    If you want, sprinkle with some flaked almonds. It looks nice so why not.

    Bake for 25 minutes, untill risen and a yummy golden brown.

    It should look this, probably even a little more golden around the edges. If you find the pastry going slightly black for your liking then pop some tin foil around the case's edge.

    Make the icing while your Bakewell is cooling: Mix the icing sugar with the water. If it is too thick/thin then add water/more icing sugar untill it's how you like it. Put the icing ontop of your Bakewell and quickly dectorate it with flaked almonds and glace cherries before your icicng sets.
