I like to use duck eggs when I can because of their bright orange creamy yolks. You can often find them at farmers’ markets. The yolk is very rich and, with the addition of cream and lashings of butter, make a wonderfully indulgent breakfast. Your breakfast friends will beat down your door for this one.

You Will Need (7 things)

  • 4 Smoked Salmon
  • 8 Duck Eggs (2 per person or you can just use chicken eggs if you can’t find duck eggs)
  • 100 ml Fresh Thickened Cream
  • 2 Big knobs of Butter , for frying and for buttering the toast
  • Sea Salt and freshly cracked black pepper, to season
  • 4 slices Easy Awesome Bread
  • Butter , to serve

Steps (1 step, 60 minutes)

    Finely slice the smoked salmon into strips.
    Whisk the eggs and cream together. Heat a non-stick pan over a high heat, and melt 1 knob of butter.
    Season the egg mixture and pour it into the pan. Fold the eggs quickly as they cook. Just before the eggs
    are set, fold in the salmon pieces for about 5 seconds and then remove from pan.
    Slice and toast the bread and spread with lashings of butter. Serve the eggs on the side.
