Another seasonal family favorite, that finds it's way into other homes every year. Great with vegetable cous cous and tinned tomatoes or buttered new potatoes and backed beans! For speed you can use a bought flan case like I have in the photos.

Description

Another seasonal family favorite, that finds it's way into other homes every year. Great with vegetable cous cous and tinned tomatoes or buttered new potatoes and backed beans! For speed you can use a bought flan case like I have in the photos.

Instructions

  1. Turn oven on Gas mark 5 /190 degrees. Cut pumpkin into small pieces, place into a pan of boiling water and cook for 3-5 mins.

  2. Drain well, puree in a food processor or push through a sieve.

  3. Return to the pan on a gentle heat to dry the mash slightly. Leave to cool. If making pastry go to step 4 if you have a pre made case go to step 5.

  4. Roll out pastry, line flan tin. Prick the base then back blind for 12mins

    Cook bacon and onion in a little oil until soft and spread over the flan base.

    Season the pumpkin mash with pepper, salt and nutmeg.

    Beat eggs into the mash, mash and spoon into the pastry case.

    Mix well with a fork, now pour over the bacon and onion. Bake in the centre of the oven for 35-40mins, until centre is set.

    Now it is ready to eat or leave to cool and refrigerate until needed. Can eat cold or reheat slowly in the oven once.
