Satay Noodle Soup
With Quorn chicken, lemongrass and ginger!

Tom and I had a nasty cold a couple of weeks ago and I was craving a hearty soup to make us feel better. This satay soup is sure to do the trick and is filled with meat-free chicken and noodles to fill you up.

You Will Need (13 things)
- 100 g Quorn roast chicken slices
- 4 packets Straight to wok Noodles
- 1 l Vegetable Stock
- 400 ml Coconut Milk
- 1 Red Onion
- 4 Garlic Cloves
- 1 stalk of Lemon Grass
- 1 in grated fresh Ginger
- 6 tbsp Peanut Butter
- 2 tbsp Dark Soy Sauce
- 6 tbsp Salted Peanuts
- 2 tbsp Chopped salted Peanuts to serve
- Fresh Herbs to serve
Steps (4 steps, 15 minutes)

Chop the red onion, garlic and lemon grass and cook in a sauce pan with some olive oil until golden.

Stir in the peanut butter, soy sauce and grated ginger.

Stir in the vegetable stock, coconut milk leave to simmer for 30 minutes. Add the Quorn chicken slices, noodles and un-chopped peanuts.

Serve with chopped peanuts and a handful of chopped fresh herbs.
