The better ingredients you start with, the tastier your caramel will be. Use real butter and real vanilla. You won't be sorry.
Prepare a 9 by 9" (for thicker caramels) or 9 by 13" pan by coating the inside with butter or pan spray. Combine all ingredients except vanilla in a large microwaveable bowl. Cook in microwave for 2 minutes. Stir. Cook for another minute and stir again. Repeat until all the butter has completely melted.
Stir well until butter is incorporated into the other ingredients. This might take a couple of minutes. Cook for 5 minutes.
Cook at two minute intervals without stirring. The caramel should reach a deep brown color, as shown here.
To test your caramel to see if it's done, fill a small glass with cold water. Drop a small spoon of caramel into the water and swirl. Pour out the water. If the caramel sticks to the bottom of the glass and has a firm texture when you squish it between your fingers, it's there. It will be slightly firmer once it's cool, but make sure you don't stop cooking it too soon. If you think it's too soft, return it to the microwave.
Stir in the vanilla. Pour the caramel into the prepared pan. Let it cool for a couple of hours. Cut the caramel into bite-sized pieces. Press your finger into a small bowl of sea salt, then press into the top of the caramels. Wrap each piece in waxed paper.
