Salmon Quinoa Burger Patties With Kale Salad
Salmon burgers are a nice way to mix up how you eat seafood!

One of my new favorite ways to eat salmon is in the salmon quinoa burgers! This meal is so fulfilling, you won't know you just ate a lean, healthy meal!

You Will Need (15 things)
- 16 oz Salmon
- 1 tbsp Cooking Oil
- .3 cup Shallot
- 2 Garlic Cloves
- 1 cup Kale
- 2 tbsp Dijon Mustard
- .5 Tablespoon Old Bay
- 1 Avocado
- 2 cup Kale
- Salt and Pepper to taste
- .75 Quinoa cooked
- 1 Eggs beaten
- .25 Red Cabbage sliced
- .25 cup Carrot(s) sliced or julienned
- Vinaigrette dressing

Roughly chop the salmon, then place in a food processor or blender, or use an immersion blender to finely chop up the salmon. Add in the shallots and garlic and blend some more. This will keep the patties from falling apart. With a knife finely chop the remaining salmon, transfer to a large bowl.

Heat a large nonstick skillet over medium heat, add the oil and saute the kale. Season with salt and pepper and cook over medium heat until wilted and tender, about 4 to 5 minutes.

Transfer to the bowl with salmon along with quinoa, Dijon, Old Bay and egg. Mix to combine, then form into 5 patties, about 1/2 cup each.

Lightly heat a nonstick grill pan or skillet over medium heat, when hot coat with oil and add the salmon patties. Cook the 4 to 5 minutes, then gently turn and cook an additional 4 to 5 minutes, or until cooked through.

Toss the salad ingredients together on a plate. Serve immediately with salmon quinoa burgers on top, then top with the dressing. Garnish with avocado or toppings of your choice.
