Line a baking sheet with tin foil, measuring double the width. Slice the lemon and lay in two lines on the foil. Skin the salmon fillets and place on top of the two lines of lemon. Season with plenty of salt, pepper and dried herbs.
Cover with the foil and bake in a hot oven for 15 minutes at 200'C until cooked.
Finely chop the lettuce. Chop the avocado and salmon into chunks.
Heat the tortillas and then top with the lettuce and sprinkle with salmon, avocado and pomegranate.
Shake together the mustard, honey and olive oil before drizzling on the tacos and serve.
