I used to make this with shrimp, avocado, cucumber, and carrots in them and dipped in wasabi-mayo. I like this way much better, it is way faster to make and a great use for leftover salad and veggies.

You can use pretty much anything you want as the filling. This just happened to be what I made that particular day.
As for spring roll wrapper, as long as it is the kind that has been dried and you need to rehydrate it, that should be fine.
And yes you can just use warm water, I just happen to like keeping the water warm because I make dozens at a time.

You can just use hot water straight from the tap and put it into a bowl instead of putting it in a pan.

I made these in my cooking class. We added bean sprouts. A peanut sauce is a great idea though!
