Rustic Kale Salad
This Kale Salad is everything you need to fix your Vitamin C intake for the cold season. It’s also incredibly delicious and nice to look at. It’s a win/win!

You Will Need (19 things)

For the salad:
- 60 g Quinoa
- ½ tsp Sea Salt
- 200 g Fennel , cored and thinly sliced
- 1 tbsp Olive Oil
- ½ tsp Sea Salt
- 1 pinch Pepper
- ½ tsp Raw Sugar
- 100 g Kale , stems removed and leaves torn into small pieces
- 1 small Apple , thinly sliced
- 50 g Pomegranate Seeds
- 30 g Walnuts

For the dressing:
- 4 tbsp Lemon Juice
- 3 tbsp Olive Oil
- 2 tbsp Maple Syrup
- 1 tsp Dijon Mustard
- ½ tsp Sea Salt
- 1 pinch Pepper
Steps (4 steps, 25 minutes)

Cook the quinoa in salted water as instructed on the packaging.

Sautée fennel with olive oil in a skillet while stirring for five minutes. Season with salt and pepper, then add the sugar. Caramelise for three more minutes, then set aside.

Prepare the dressing by combining all ingredients.

In a big bowl assemble all ingredients and add the dressing.
