Rosemary & Gin Chocolate Pots

Indulgent gin laced chocolate & rosemary puddings

Sure to please any chocolate lover, these indulgent puddings are laced with Gin Mare, infused with rosemary and topped with sea salt.

You Will Need (10 things)

  • 200 ml Soy Milk
  • 200 ml Double Cream
  • 100 g Dark Chocolate
  • 60 g Cocoa
  • 40 g Sugar
  • 2 Egg Yolks
  • 4 tbsp Gin Mare
  • 1 tbsp Cornflour
  • 2 twigs Rosemary + extra to serve
  • Sea Salt to serve

Steps (11 steps, 60 minutes)

    Fill a small pan with a small amount of water and bring two twigs of rosemary to the boil.

    Remove from the heat and leave to seep for 10 minutes.

    Heat the milk and cream in a separate pan.

  4. 4

    Whisk together the cocoa, sugar and cornflour.

  5. 5

    Remove the rosemary from the water and bring to the boil again.

    Whisk in the eggs along with 4 tbsp of the rosemary water.

    Chop the dark chocolate.

    Whisk the cocoa mix and dark chocolate into the milk over a low heat until smooth and all the chocolate has melted.

    Add the Gin Mare.

    Pour the pudding into small pots, cover and refrigerate.

    When set, top with some sea salt and a small sprig of rosemary.
