I've been craving Rogalach since the weather got colder, and eventually decided to make them myself. Totally worth the work and all the dirty dishes. I used a chocolate and a cheese filling but you can use almost anything - jam, nuts, dried figs, apple anything sweet and tasty.

Melt 1 stick of butter with 2/3 cup of milk till butter is melted, leave to cool to room temperature. Mix flour and yeast then add 2 eggs, the milk and butter mixture, 1/3 cup of sugar vanilla, and salt.
Knit into dough for about 10 minutes. At first the dough would be sticky, but after a couple of minutes it will harden and become soft and shiny. Cover with a clean towel and leave to raise for 45 minutes till dough double in size.
In the meantime, make cocoa filling. Melt 1 stick of butter and then add 1 cup of sugar, cocoa and cinnamon. You can also add a little bit of scotch. mix till sugar is melted, then cool in the fridge till the mixture harden (about 20 minutes).
When dough is ready. split into 6 balls.
Pre-heat over to 375F.
role each ball to a flat round as thin as you can. cover with a thin layer of the cocoa spread. Then slice to 8 slices (like a pizza!)
You can add chocolate chips, peanut butter chips or nuts.
An alternative filling can be Ricotta cheese mixed with sugar and raisins.
Role each slice from base to tip and lay on a baking sheet. Whisk 1 egg and brush the top of each Rogalach.
bake for 15-20 minutes till Rogalach and nice and brown. In the meantime, prepare sugar syrup: Mix 1/2 cup of sugar with 1/2 cup of water and mix constantly till sugar melt and the mixture boils. When Rogalach are baked, take out of oven and brush immediately with sugar syrup.
Leave to cool till room temperature and try not to eat them all at once... Those freeze pretty well or will keep for about a week in an air tight box.
