The sweet earthiness of the potatoes brings a nice contrast to the salty tanginess of the feta, and is then perfectly complemented by the aromatic and velvety sage. They are great as a light meal, vegetarian option, or as a tasty side dish to any main. They will soon become a favourite at home.
The sweet earthiness of the potatoes brings a nice contrast to the salty tanginess of the feta, and is then perfectly complemented by the aromatic and velvety sage. They are great as a light meal, vegetarian option, or as a tasty side dish to any main. They will soon become a favourite at home.
Wash and dry your sweet potatoes, place them whole in an oven proof tray *leaving some space between them) and bake them at 400F for around 1 hour or until fully cooked *they should be soft when inserting a knife).
Meanwhile, heat the olive oil in a pan and fry the sage leaves until they become crispy. Remove and place them on top of a kitchen towel in order to absolve any oil excess. Do not throw away the oil!
Slice the sweet potatoes in the middle, half way through, sprinkle some of remaining sage oil evenly. Stuff them with crumbled feta and top with fried sage leaves and sea salt to taste.
