So between Practical Magic and Hocus Pocus, it’s been a particularly witchy couple of days. I had thought that tonight would yield pumpkin carving and roommate fun times but Alex had a prior engagement and Stobaugh got stuck at work so I ended up alone, but not before I had managed to take the lid off of my pumpkin. It seemed a waste to leave a perfectly good pumpkin untouched even if I wasn’t going to carve it up tonight. So I figured I’d try my hand at making some roasted pumpkin seeds.

You Will Need (3 things)
- Seeds of one Pumpkin
- Kosher Salt
- Olive Oil
Steps (3 steps, 45 minutes)

Pumpkins are, scientifically speaking, icky on the inside. Once you’ve opened it up all you have to do is scoop out the insides, being sure to clean the sides really well so that when you come back to carve it, it will be ready to go.

Then just wash and dry your seeds, laying them in a flat layer on a cookie sheet.

Season how you like then bake at 300 F for 45 minutes, stirring occasionally.
