A delicious salad with roasted beets, barley, and feta. It is satisfying enough to be a complete meal.

You Will Need (8 things)
- 3 medium Beets
- 1/3 dry Barley
- 2 cup Arugula or a salad mix
- 1/3 Feta Cheese crumbled
- 2 tsp Balsamic Vinegar or a little bit more to taste
- 1 tsp Olive Oil
- Salt
- Black Pepper
Steps (4 steps, 20 minutes)

Wash the beets scrubbing them but not peeling then dry. Preheat oven to 210-215 degrees C (420-430 degrees F). Wrap each beet up in foil (better double layer). Place on a baking tray and roast for approximately 50-60 minutes. Check it with a wooden stick - if it goes through the beet easily, they are ready. Otherwise, cook them for an additional 10-15 minutes or until ready. Off heat but leave the beets in the oven for 20-30 minutes then remove from oven and completely cool.

In a meanwhile, cook the barley as recommended on the package (usually it takes 25-40 minutes depending on the type). Drain.

Prepare the simple dressing by whisking the balsamic vinegar with the oil, salt, and pepper.

Peel and cube the beets. In a bowl combine the barley, beets, salad, and dressing and toss to coat. Divide between plates and sprinkle with the feta.
