Rhubarb Ginger Cocktail

You Will Need (11 things)

  • ½ cup Water
  • ¼ cup Sugar
  • 1 Vanilla Bean
  • Honey (for sweetness)
  • ½ oz Lemon Juice
  • 5 Basil Leaves
  • 1 Rhubarb Ginger Syrup
  • 3 Light Rum
  • 1 oz Ginger Beer
  • 2 tsp Fresh Ginger
  • 1 lbs Rhubarb

Steps (6 steps, 15 minutes)

    In a medium saucepan, combine ginger, rhubarb, and water. Bring to a boil and then reduce to a simmer. Add sugar and the insides of 1 vanilla bean. Let cook over medium heat for 5-7 minutes. Grab a spoon and have a little taste. If you would like it a bit sweeter, add honey.

    Strain compote through a fine mesh strainer to separate the compote from the syrup. Store the compote for later use and keep the syrup out for the cocktail.

    Add 3 basil leaves and 1/2 ounce lemon juice to a glass and muddle until basil leaves are completely broken down.

    In a cocktail shaker filled with ice, add ginger beer, rum, rhubarb-ginger syrup, and lemon juice/basil leaves. Shake vigorously.

    Pour over ice.

    And add a sprig of basil for color and enjoy!
