A lovely moist, sweet, sour, crunchy cake. You can eat with or without the sauce. Good either way.
A lovely moist, sweet, sour, crunchy cake. You can eat with or without the sauce. Good either way.
Heat oven 175 degrees. Mix butter & sugar together.
Add egg. Mix through.
Mix flour, salt, Bicarb & baking powder together. Add alternative flour mixture & buttermilk. Mix until just combined.
Fold in the rhubarb.
Pour into tin.
Mix all strudel ingredients.
Pour into tin. Bake for 40-45 mins until cooked through.
Sauce... Melt butter.
Add sugar & evaporated milk. Bring to a boil. Cook for 2-3 mins until thickened.
Remove from the heat. Add the vanilla. Stir through.
Slice cake & serve with the sauce.
