A rich red velvet cake covered in bright white cream cheese frosting was the perfect way to display this gorgeous red cake topper.
Whisk together the butter and sugar and then add the eggs, one at a time.
Mix in the cocoa, vanilla and drops of red food colouring until you're batter is the desired shade of red.
Make your own buttermilk by whisking together the soya milk and lemon juice and letting stand for a minute. Beat half of the buttermilk into the mixture along with half of the flour.
Beat in the remaining buttermilk and flour.
Divide the batter between three greased cake tins.
Bake at 180'C for 20 minutes.
Beat together the cream cheese and butter. Gradually add the icing sugar and continue beating until well combined and fluffy.
Spread the top of each cake with icing.
Place the three cakes on top of each other and spread the outside of the cake with icing.
Dust with red edible glitter and top with your cake topper.
