Made these for my boyfriend's 18th birthday. We've been dating since we were 14 and I have somewhat ran out of birthday ideas over the years. Thought this would be yummy and cute, since he's really into frogs and reptiles. He has two red-eyed tree frogs, so I thought that would be the perfect cupcake treat!
Made these for my boyfriend's 18th birthday. We've been dating since we were 14 and I have somewhat ran out of birthday ideas over the years. Thought this would be yummy and cute, since he's really into frogs and reptiles. He has two red-eyed tree frogs, so I thought that would be the perfect cupcake treat!
Make the cake mix as directed on the box and pour into desired cupcake cups (I suggest plain colored ones). Bake as specified.
When finished take the cupcakes out of the oven and let cool for about 30 minutes. This step is very important because if the cupcakes are still warm the icing will not stick well.
While the cupcakes are cooling, prepare your icing by putting it all into a medium sized bowl. Add about 5 to 6 drops of green food coloring (depending on the shade of green you want your frogs to be) and mix thouroughly.
At this point you can also start to prepare the frog "eyes." Cut the marshmallows in half length-wise, and then again width-wise. You will need double the amount of cupcakes you have so that there are two eyes per frog (ex. 24 cupcakes = 48 marsmallow eyes).
Using a pastry brush, brush a small amount of warm water (just a little, you are not soaking, JUST dampening) over the marshmallows. Do not get the bottom part damp (this will be the part that is placed onto the icing). Roll in red sprinkles and set aside.
Now that your cupcakes are cool, you can ice them with the green icing that should be prepared.
Place the marshmallow eyes on top of the icing with the white side/non-sprinkled side down.
Use the black decorator's icing to make black vertical line on the marshmallow. This will create the "eye" look.
Also use the black decorator's icing to create two dots that will be the nose. You can also put a "smile" onto the frog as well.
Optional: Color a portion of the icing turquoise blue and ice a small half-circle portion underneath the "mouth" of the cupcake for the blue-bellied effect that a real red-eyed tree frog has.
Now you've completed your red-eyed tree frog cupcakes!
