You Will Need (5 things)

  • 2 cup Rough-chopped Pecans (or any nut of your choice)
  • 2 ½ cup Medjool Dates ,pitted
  • 1 cup Raw Cacao Powder (or unsweetened cocoa powder)
  • ½ cup Natural Almond Butter
  • 1 cup Roughly-Chopped Walnuts + 2 Tbsp for springing on as a topping

Steps (3 steps, 20 minutes)

  1. 1

Place pecans in food processor and blend on high until they're finely ground, but not enough that they're beginning to turn into butter
Add the cacao powder and salt.
Pulse a 3 or 4 times to combine.
Add the almond butter, pulse 3 or 4 times more to combine

  2. 2

Add the dates .. one at a time through the feed tube of the food processor, while it is running. (** Note, I found when I added too many at a time, my food processor had a hard time keeping up)
After processing, the brownie mix should resemble cake crumbs, that when pressed, will easily stick together. If your mix won't stick together, add a couple of more dates

  3. 3

In a large bowl walnut-cacao mix, along with the chopped walnuts.
Press into a lined vessel. (I used one that was a little less than an 8x8" square)
Top with a few more chopped walnuts
Place in freezer or fridge until ready to serve. The cold also helps make them easier to cut
Store in the fridge in an airtight container. (They also freeze well)
