I always need my mid-afternoon sweet snack. These raw vegan banana “nice” cream sandwiches couldn’t make me happier! And the spices like cinnamon and coconut really remind me of oatmeal cookies, and the best part, since these are raw, it almost tastes like cookie dough!

And if you are a chocoholic like me, you can add a bar of chocolate and make it a s’more for added delicousness.

You Will Need (10 things)

  • 2 cup Rolled Oats
  • 1 cup Shredded Coconut
  • 1 cup Agave
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 4 tbsp Almond Milk
  • 1 tsp Vanilla
  • 1 cup Bananas frozen, then lightly thawed when ready to prepare
  • ¼ cup Peanut Butter or other butter like almond
  • 2 cup Bananas frozen, then lightly thawed when ready to prepare

Steps (5 steps, 30 minutes)

    For the cookies: In a high speed blender or food processor, add oats, coconut, vanilla, and cinnamon. Process into a flour-like consistency.

    Add agave syrup, bananas, and almond butter and process until a sticky ball of dough forms.

    Scoop out the dough with an ice cream scoop and place on a baking sheet lined with parchment paper. Flatten the balls into cookies and stick them in the freezer.

    For the banana ice cream: Process all ingredients in a food processor, adding the almond milk a little at a time until you get a creamy ice cream.

    Assemble and take cookies out of the freezer. Sandwich banana ice cream between 2 cookies. Place back in the freezer to harden or enjoy right away!
