Cocktails and cakes go perfectly together, so we added a raspberry liqueur twist to a cherry bakewell for a super sweet and boozy treat.
Mix together the flour and baking powder until well combined. Add the ground almonds, butter, sugar, eggs and raspberry gin and whisk with an electric mixer to form a thick batter.
Grease a cake tin and spread three quarters of the batter into the tin.
Chop 50g of cocktail cherries into quarters and sprinkle on top of the cake along with all of the fresh raspberries.
Spread the remaining cake batter on top and bake in an oven for 45 minutes at 180'C.
When golden, remove the cake from the oven and leave to cool.
Mix together the icing sugar and milk until runny and spread over your cake and sprinkle with sliced almonds.
Cut the remaining cocktail cherries in half and place around the cake.
