Chambord, sparkling elderflower and fresh orange juice jelly, dyed with different food colourings and poured in oranges, lemons and limes. I added blackberries to the lemons to make them a bit more interesting. All inspired by the Lorraine Pascale cookbook which has the watermelon limes in it...I actually was making halloween jellies and thought I'd make some grown up jellies too. Thats why I had a surplus of black jelly!

Instructions

  1. Small 033

Cut in half and then remove the fleshy insides of a selection of oranges, limes and lemons. I kept the flesh and the juice to make some of the jelly with...and some of it to have for breakfast!

  2. Small 041

I made a batch of jelly using Vege Gel, I poured 500ml of sparkling elderflower drink, 200ml of orange juice and a few glugs of chambord into a pan. Then sprinkled the vege gel pack on top and mixed and heated until boiling.

  3. Small 084

Divide the batch up, depending upon how many different coloured jellys you want. I had black, blue, yellow, red and purple.

  4. Small 126

Pour into the fruits and leave to set for a few hours in the fridge. When set cut the fruit halves into segments, be careful not to rip the jelly when cutting if you use a serrated knife! For the watermelons I used chocolated drops for seeds. I had leftover jelly too so poured it into ramekins and added fruits...Enjoy!
