Prepare the quinces : wash, peel and remove hard parts. Cut them into quarters. Cook the quinces with two glass of water until they are tender Remove the parts of the quinces that may still be hard. Drain the quinces and keep the cooking water. Cut in small slices.
Salt and pepper the pork chops. Pour oil into a pan, heat and add pork chops. Cook on both sides. Remove the pork chops from the pan and pour in a little quince juice to deglaze it. Let the sauce reduce on on low heat. Serve with rice
