This Coconut Curry is a great weeknight meal. It’s super simple, yet totally delicious. The perfect way to start the week!
Heat olive oil in a medium skillet over medium heat. Add garlic and saute for a minute, stirring. Add spices and salt. Stirring constantly, cook spices until fragrant (1-2 minutes).
Add tomato to skillet. Cook, stirring occasionally, until tomato is slightly softened and a sauce has formed (about 5 minutes).
Add chickpeas, spinach, and coconut milk to skillet. Simmer until spinach is wilted and everything is heated through (about 5 minutes). Taste and add more salt, if necessary.
Serve over rice.
