This won't win you any baking awards but if you like you often find yourself craving something sweet and tasty but have nothing in the fridge then this can be a real life saver!! You will need a microwave for this!!
Gather your ingrdients :) (You don't need the pasta or Coke Zero...they were just on my counter :/)
Grab your bowl!! I have only ever used a ceramic of glass bowl for this so my advice would be to stick with either of those options as they conduct heat better. Add 4 table spoons of self-raising flour. Followed by 4 table spoons of caster sugar. If you would like to make your sponge a chocolate sponge, add 2 table spoons of cocoa powder (or hot chocolate powder) here. Mix the dry ingrdiants together thoroughly.
Once your dry ingrediants are mixed, add 3 table spoons of your cooking oil or spread. In the UK, we have a butter brand that makes a cooking spread (Flora) which I find the best to use but I've done it with regular cooking oil before and it was fine. The add 3 table spoons of milk.
Then add your egg and a drop of vanila essence (or flavouring...).
Mix!! Make sure you mix it all, it has a habit of hiding dry ingrediants at the bottom so really give it a vigerous stir!!
Pop in the microwave on full for 3 minutes (if your microwave is super powerful like mine, maybe check it at 2 and a half minutes to stop it drying out).
PING!
Using a knife, score around teh outsude of the sponge to loosen from the bowl, then decant onto a plate. As you can see...I failed on the mixing part this time round lol
Cut in half and share with your beloved...or put in the frdige for tomorrow if you're selfish like moi!! Tastes great with custard ;)
