Pumpkin Quinotto

Similar in texture to a risotto but made with quinoa instead of rice.

A warm and comforting dish, slightly sweet and with a lovely aroma. A bowl of this Quinotto is the perfect comfort food for those cozy nights indoors. Similar to a risotto, but due to the quinoa its higher in protein, also it's vegan and free of gluten, so quite a healthy and easy option for any meal.

You Will Need (3 things)

  • 500 g Pumpkin
  • 450 g Cooked Quinoa (preferably white quinoa)
  • Fresh Rosemary

Steps (2 steps, 40 minutes)

    Cook the pumpkin in boiling water (only so that the water covers the pumpkin slightly), once tender drain and place in a blender or food processor together with 1 tbsp of olive oil.

    Blend until smooth like a puree, combine with the cooked quinoa, add some salt and pepper and top with fresh rosemary leaves for a tasty final touch.
