I modified my old recipe because I had my wisdom teeth removed and I couldn't eat whole nuts. Little did I know I made it even better by grinding the nuts up! Hope you enjoy it! ;) *note - you can also use spelt flour, it gives the bread a rich darker color and texture.

Okay preheat your oven to 350 degrees and mix the flour, salt, baking soda, and sugar together in a bowl.
In another bowl, mix the 2 eggs, olive oil, pumpkin, water, spices, and vanilla together.
In another bowl, (last bowl, I promise), mash up the 1/2 cup of walnuts. *note- you can use a potato masher, a mortor and pestle, etc to mash up your nuts. I used a huge meat mallet. ;)
Now add the dry mixture of flour, salt, baking soda, and sugar to the wet mixture of eggs, pumpkin, olive oil, spices, and vanilla.
After that is mixed altogether, add the nuts. But don't stir it too much.
Alrighty the last step: pour mixture into a greased loaf pan, sprinkle the top with the tablespoon of sugar, and pop it in the oven for 50 - 60 minutes or until you can pull a knife out of it clean. *note - the measurements for the loaf pan are 9x5x3 Hope you enjoy it! ;)
