Making Indian Biryani is a tedious and lengthy procedure. But the delicious and aromatic rice infused with flavours of various spices at the end is really worth the slaving! Ok. slaving is an exaggeration but fair warning this isn't something you want to do in a hurry.
Making Indian Biryani is a tedious and lengthy procedure. But the delicious and aromatic rice infused with flavours of various spices at the end is really worth the slaving! Ok. slaving is an exaggeration but fair warning this isn't something you want to do in a hurry.
Marinate the prawns in # 1 tbsp paprika # 1 tbsp ginger-garlic paste # a pinch or two of turmeric # salt to taste for 3-4 hrs Deep fry and let rest on paper towels. keep aside
Blend the following to make a thick paste # a handful of cilantro # a handful of mint leaves and the stems # 1 inch ginger(peeled) # 8-10 garlic pods # 4-5 bird's eye chillies # 1 medium onion, roughly chopped # 1-2 tspn poppy seeds # 1-2 tblsps of water
Heat 2 tbsp oil + 2 tbsp ghee(clarified butter) in a pan. Add 3, large, chopped onions and cook till pink and soft Now add 2, large, chopped tomatoes and cook till its all turns into a mushy half-cooked mixture (about 5-7 min)
Now add the paste that we previously made. Also add a handful of finely chopped mint leaves along with the stems. Mix will and cook for about 10 min or till the raw smell goes away. add some 4-5 tbsps of water as it dries.
Now add 2 tbsps of biryani powder. If you can't get hold of Biryani powder you can easily make it at home Take 1 tbsp each of : # coriander seeds # black pepper # cardamom # nutmeg # cloves # cumin # aniseed # cinnamon Pound it into fine powder or run it through your coffee maker. Add two tbsps of this powder with a tsp of paprika and a pinch of turmeric. (You can store the rest of the powder in an airtight container) Mix well. If you are making the spice powder at home then add a dried bayleaf into the masala. Cover it and let it cook for 5-7 more minutes.
Meanwhile, in a large vessel add 4 cups of water, 1/4 cup of salt, 2 cups of rice and : # a piece of cinnamon # 2 pods of cardamom crushed # 2 star anise # 4-5 cloves
In a small pan take 1 tbsp ghee and heat it. Add a handful of raisins and cashews. toss till it is all golden and lightly roasted. Remove and keep aside. In the same pan take two more tbsp of ghee and add finely chopped onions (2 large) and caramelize till it is crispy and brown. Keep aside with the raisins and cashews. This is for garnishing
By now your Masala will be fully cooked and aromatic. Add the fried prawn to it and mix well.
Add rice to the masala, little by little and mix. Incorporate all the rice in this way.
Keep the vessel back on heat. Poke holes into the rice with the end of a spoon or a chopstick. pour half tsp of ghee into the holes cover the holes and garnish with the onions raisins and the cashews. Cook on medium heat for 5 min covered so that all the flavours are absorbed by the rice.
your Prawn biryani is ready!
For the salad: In a bowl add- # 1 chopped onion # 1/2 chopped and cucumber # a handful of cilantro # salt to taste # 1 cup of curds/yogurt # 1/2 bird's eye chilli finely chopped( optional) You can make the salad beforehand and chill it.
Serve with the salad
