I love this focaccia bread. The making of it is simple and quick, but it needs to rise so it takes a while. I use fresh yeast, but I guess you can use dry yeast too, however I don't know if the quantity is the same or there's a different proportion! I used a Pyrex pan to bake it, but you can use whatever pan you want :) I will add picture to the steps as soon as I make it again :D

Description

I love this focaccia bread. The making of it is simple and quick, but it needs to rise so it takes a while. I use fresh yeast, but I guess you can use dry yeast too, however I don't know if the quantity is the same or there's a different proportion! I used a Pyrex pan to bake it, but you can use whatever pan you want :) I will add picture to the steps as soon as I make it again :D

Instructions

  1. Combine flour with crumbled yeast, and with sugar and salt

  2. Add little by little warm water (it has to be warm, NOT hot!!) and olive oil

  3. Knead the dough very well for at least 5 minutes. If it's too dry add a little water, if it's too wet add a little flour. It has to be elastic and not sticky

  4. Put the dough in the oven (it has to be turned off and not hot, obviously!) for two hours, until it duplicates

  5. While the dough rises, slice mozzarella and let it drain, and slice potatoes. Potatoes slices have to be VERY thin, like chips! :) Oil the pan with a little olive oil

  6. When the dough is ready, take it and roll it. Put it in the oiled pan, and press it gently with your fingertips. You have to create "dots" on it :) be careful not to break, you just have to "emboss" the dough!

  7. Put on the dough the mozzarella slices, then put the potatoes slices on top of mozzarella

  8. Let the focaccia bread rise again for half an hour

  9. When the focaccia bread is rised, reheat your oven at 180°C, and while the oven is heating spread the top of the potatoes with a little oil, rosemary leaves and a little salt

  10. Put the focaccia bread in the oven for 20/25 minutes, or until it's light brown (it can takes more or less time, it depends of your oven: with my gas oven it took 30/35 minutes at medium-high temperature)

  11. Enjoy it!!
