Savory and delicious, these pork-stuffed okra are great as appetizer or main course!
With a sharp knife make a slit in the okra lengthwise. Pry open and hold open with one finger. With your other hand, pick a little (not much more than a knife tip) ground, seasoned pork and stuff carefully into the slit. Proceed until all okra are filled.
Heat a tablespoon of vegetable oil in a skillet. Add the ginger and put in the okra with the stuff-side down. Sprinkle okra (to taste) with a little paprika, cayenne, salt and pepper. Over medium-low heat, pan-fry gently for up to 5 minutes, and turn over. Pan-fry for another 5 minutes over medium-low heat until the okra are soft. Take out and keep warm. Continue until all okra are done.
Serve with a fresh tomato salad, grated cucumber yogurt and (saffron) basmati rice!
