Pork Ribs
Cook some pork ribs with SLATE

You Will Need (21 things)
- 3 Racks Pork Loin ribs

Brine:
- 6 Cloves Garlic (crushed by hand)
- 1 tbsp Black Pepper (Whole)
- 1 bunch Rosemary
- 1 bunch Thyme
- 1 gal Hot Water
- 1 Cup Kosher Salt
- 2 qt Ice

Spice mix: (or Rib Rub) - Grind in spice mill:
- ¼ cup yellow Mustard
- 2 tbsp Black Pepper
- ¼ cup Fennel Seed
- 2 tbsp Coriander Seeds
- 1 tbsp Chili Flakes
- 1 tbsp Mustard Powder

Mix in after removed from mill:
- ¾ cup Paprika
- ½ cup Dark Brown Sugar
- 1 tbsp Dried Ginger powder
- 3 tbsp Salt
Steps (9 steps, 60 minutes)

Make brine by using hot water to dissolve salt and then add the rest of the ingredients to the brine.

Let steep for 30 minutes, then add ice to cool brine

Brine rib for 12 to 36 hours. No longer than that!
Remove from brine and season racks liberally with spice and double wrap in foil. (you don’t have to use all the spice) -

Place on a sheet tray with roasting racks and cook at 275F for two hours

Remove from oven open the tin foil careful not to lose the juice

Place ribs in the smoker for 1 hour and 30 minutes @ 225F

Remove ribs from smoker and take them out of the tinfoil

Place them on a sheet tray with parchment and wrap the sheet tray tight with plastic wrap trapping in the steam from the ribs

Let them cool for 20 minutes then cut them to desired size.
Reserve the juice to baste the ribs during grilling
